Living in a post-apocalyptic world will make food hard to come by and processed food will be non-existent. Cactus with egg tacos is a delicious meal for two, that you can prepare in about 15 minutes.

Keep in mind that all the ingredients should still be readily available even after doomsday.

Prepare The Main Ingredient Cactus.

This might gross, but it’s actually delicious when prepared correctly. And when there are no stores around, because you’re living in a post-apocalyptic world, cactus can be easily found sitting right on the side of the road and you probably never even thought about using it for food. I never did, until my wife introduced it to me in the mid-eighties. 

Prickly Pear

If you haven’t tried it, I highly recommend it. Cactus is an incredible source of nutrients and vitamins even if you’re not living in the post-apocalypse. And it’s readily available and easy to prepare.

Since there are no grocery stores in the apocalypse, we’ll assume you’ve already harvested a number of pads from your local prickly pear cactus plantation, removed the spines and sliced them into strips. 

If you’re luck enough to not be living in the apocalypse you can find this delectable cuisine at your local grocer already despined, sliced and pickled. Just rinse and dry and you’re ready for the next step.

I’ve heard that you can eat these raw, but never tried that. They have some slimy stuff and I’m guessing that would be quite bitter. Thankfully, the cactus with egg taco recipe calls for cooked cactus pads, but first it’s best to dice them up into small cubes. Like you see in the photo below.

Cooking Cactus With Egg Tacos

Once you’ve diced your cactus and have your eggs cracked and ready to scramble, turn the heat on and add some cooking oil in your pan. For this cactus with egg taco recipe I used sunflower oil, but Olive Oil works just as well. Even butter works, if you’re not worried about cholesterol. And who worries about cholesterol in the apocalypse.

While your pan heats up it’s a good time to crack your eggs and get them ready for the next step. Whether you’re cooking or simply trying to survive in the post-apocalyptic world, preparation involves multi-tasking, so stay on your toes.

Add In Onions for Flavor

Toss your diced cactus into the heated oil and while that’s beginning to caramelize, dice some onion for extra flavor. Man the smell is amazing.

Toss your onions in with the cactus and cook for about 5 minutes. You want them to start to brown, but not burn. While that’s happening, you can prepare your eggs. Cactus with egg tacos call for scrambled eggs so you want to “Whip it… Whip it good”.

Once the cactus and onion are sufficiently cooked, dump your whipped eggs into the heated pan. I like to cook in a very hot pan, so the eggs don’t take long to cook. I like them dry, but not browned. Try not to over cook the eggs, but don’t leave them runny either. Nobody likes runny scrambled eggs.

Add Beans for Protein and Fiber

Now this is optional, but adding pinto beans to this recipe is an absolute delight. I keep my pan hot after placing the cactus with eggs into a bowl, then add a couple ounces of pinto beans to the heat.

While the beans are heating up, you can throw a couple corn tortillas on a flat pan and get those nice a hot.

While your tortillas are heating up, you can smash your pinto beans. This is optional, but I prefer smashed beans so I’m gonna smash em.

Assembling Cactus With Egg Tacos

As soon as your tortillas are warm and your beans are smashed. Add everything on a plate and prepare for serving along with your favorite beverage, in your favorite mug. Coffee in my Mickey Mouse Mug for me. And I topped mine with some shredded cheese and sour cream. But you can also add your favorite sauce to this, and it’s a meal fit for any survivor of the apocalypse.
